Cayuga Sustainable Hospitality is the regional leader in sustainable hotel and ecolodge management and development. Cayuga offers solutions and operational expertise to hotel owners and developers looking to enhance their performance in an environmentally and socially responsible manner. Our Food and Beverage Vision

The culinary experiences in all the Cayuga properties should be distinct and never have the feel of a “chain” or standardization. However, there are certain common denominators that we apply to all restaurants at Cayuga managed properties. 

Ingredients & Preparation: 
  • Fresh, Local, Organic, Endemic, Seasonal and Sustainable. 
  • No imitation of authentic European or Asian Cuisine. 
  • Healthy, balanced, vegetarian and vegan options, but including grass fed red meats. 
  • No overpowering sauces and not too much complexity. 
  • Simple and clean, yet elegant presentation. Subtle touches in decoration.
Service & Ambience: 
  • Informal, yet elegant ambiance.
  • Efficient, personalized and friendly service. Not stiff, but still upscale. 
  • No music or subtle music that does allow for conversations. Happy Latin Music in select cases. 
  • Soft lighting, candles and indirect lighting. 

Drinks & Bar Experience: 

  • Wine menu with South American wines as well as Organic wines. 
  • High end liquors available for up selling of drink selection (Vodka, Gin, Rum, Whisky, Tequila). 
  • Creative specialty drinks menu and cocktail selection. 

Sustainability & Interpretation:

  • Display (interpretation) of food, drinks or customs during all meal times combined with sampling, guest interaction and interpretation by the staff. 
  • Integration of the culinary experience with cultural experiences and activities.
